Good Grain Bakery's Summer blueberry pudding
🍋🫐 Lemon & Blueberry Bagel Bread Pudding

A light, summery bread pudding with a crisp golden top, creamy lemon custard and bursts of juicy blueberries.
Ingredients
- 4 gluten-free bagels, torn into bite-sized pieces
- 250g fresh blueberries
- 1 litre plant-based milk of your choice
- 4 tbsp cornflour
- 60–80ml maple syrup (adjust to taste)
- 1 tsp vanilla extract
- Zest and juice of 1 large organic lemon (or 2 small organic lemons)
- Pinch of sea salt
- Pinch of turmeric (for a beautiful golden colour)
- 2–3 tbsp melted plant-based butter
- 1 organic lemon, thinly sliced, to bake into the pudding
To Serve
- Fresh blueberries
- Plant-based yogurt or dairy-free whipped cream
- Light dusting of icing sugar (optional)
Method
- Preheat the oven to 160°C fan / 180°C conventional.
- Tear the gluten-free bagels into bite-sized pieces and spread them onto a baking tray. Bake for 10–15 minutes until lightly dried but not browned.
- In a small bowl, whisk together the cornflour, turmeric and a splash of the cold plant-based milk until completely smooth.
- Heat the remaining plant-based milk in a saucepan with the maple syrup, vanilla extract, lemon zest, lemon juice and sea salt until just steaming.
- Whisk in the cornflour mixture and cook for 2–3 minutes, stirring continuously, until the custard lightly thickens.
- Place the dried bagel pieces into a lightly greased baking dish and gently fold through the blueberries.
- Pour the warm custard evenly over the bagels, gently pressing them down so they absorb the custard. Leave to soak for 30 minutes.
- Arrange the thin lemon slices over the top and brush them with the melted plant-based butter.
- Bake for 30–35 minutes, or until the top is golden and lightly crisp, the lemon slices have softened and lightly caramelised, and the centre is just set.
💛 Serve warm with fresh blueberries and a dollop of plant-based yogurt or dairy-free whipped cream.
